Easy Shrimp Stir Fry - A perfect weeknight meal!

Ingredients:
12 oz raw shrimp
1 small red onion, sliced
1 red pepper, sliced
1 head broccoli, cut into florets
1 can water chestnuts (optional)
1 tbsp sesame oil

Stir Fry Sauce:
1/4 cup soya sauce
1 tbsp maple syrup
3-4 cloves garlic, minced
1 tsp ginger, minced
1 tbsp cornstarch
1/4 cup water

Directions:
🍤 I a large pan warm 1 tablespoon of sesame oil.
🍤 Once the oil is warm, add red onions, red pepper, and broccoli. Cook for approximately five minutes until vegetables are cooked through.
🍤 In a small bowl, combined soy sauce, maple syrup, garlic, and ginger, and stir to combine.
🍤 in another bowl add a quarter cup of water and 1 tablespoon of cornstarch and mix thoroughly.
🍤 To the pan add the water chestnuts and shrimp.
🍤 Pour the stirfry sauce and cornstarch mixture into the pan and cook until sauce thickens and shrimp is cooked through.
🍤 Serve on top of rice or noodles and enjoy!

1 tbsp chia seeds
1 scoop of vanilla protein powder (I used @sunwarrior plant based vanilla)
1 tsp cinnamon
1 tbsp almond butter (optional)
1 cup of milk (I used soy milk)
Ice (optional)

Coconut Almond No Churn Ice Cream 🍨
(Dairy free - 3 ingredients!)

This is such an easy way to make delicious ice cream at home. Incredibly simple and versatile.

I added chopped up @chocxochocolatier dark chocolate coconut cups inside the ice cream which made it over the top delish!!!

1 can coconut milk (13.5 oz)
3/4 cup cashew butter (used smooth almond butter)
1/4 cup maple syrup

Blend all ingredients in a high speed blender.
Pour into a freezer friendly loaf pan
Stir every 15 minutes for the first hour then let freeze for a minimum of 3 hours.
* if you are going to add additional treats in the ice cream, stir them in after about 30 minutes once the ice cream has started to set.*

Mushroom & Asparagus Rice

This rice “salad” is the perfect side dish, pot luck dish, or lunch meal prep recipe. Quick to make and won’t disappoint!
Serve hot or cold and enjoy!!!

2 tbsp olive oil (or butter)
1 cup onion, diced
2 cups button mushrooms, sliced
1 cup long grain & wild rice
2 cups chicken stock (or veg stock)
340 g asparagus, chopped and steamed
1/2 cups feta cheese, crumbled
2 tsp Bragg’s coconut nectar or soy sauce

🍄‍🟫In a large pan, heat olive oil.
🍄‍🟫Add onion, garlic and rice. Cook until onions are translucent.
🍄‍🟫Add stock and cover pan for 20 minutes or until rice is cooked and liquid is absorbed.
🍄‍🟫 Add Bragg’s coconut nectar or soy sauce.
🍄‍🟫In a steamer or pan, steam cut asparagus.
🍄‍🟫Transfer rice to a serving bowl and top with asparagus and crumbled feta.
🍄‍🟫Enjoy!

These are healthy, delicious and are a perfect guilt free snack.

1 1/2 cups sprouted oats or rolled oats (I used @onedegreeorganics)
1/2 cup smooth seed butter or peanut butter
1/4 cup honey
1 tbsp chia seeds
1 tbsp sunflower seeds (optional)
1/3 cup raisins or any dried fruit

In a large bowl mix all of your ingredients together. Roll into bite size balls and store in an airtight container in the fridge for up to a week. Enjoy!!!

I love this oven baked chicken! It was incredibly easy to make and packed with delicious flavour. The chicken was so tender and the potatoes were perfectly cooked.

🍋season chicken thighs and place into baking dish
🍋cut a oil potatoes and place into baking dish
🍋mix juice of 3 lemons and mustard together and pour over chicken and potatoes
🍋add garlic and chicken stock to pan
🍋cover and bake @ 375°F for one hour
🍋 uncover and bake for an additional 45 minutes until chicken is browned and potatoes are tender

Tomato Ricotta Pasta 🍅

Need an easy and delicious weeknight dinner? I’ve got you covered.
This pasta dish does not disappoint and will quickly become a family favourite.

4 cups, cherry tomatoes
1/4 cup olive oil
1 cup ricotta cheese
3 cloves, garlic, minced
8 ounces of your favourite pasta
Pesto (fresh or from a jar)
Parmesan cheese

🍅 Preheat oven to 400°F
🍅 In a baking dish, place, your cherry tomatoes and top with scoops of ricotta.
🍅 Drizzle with olive oil and top with salt, pepper, and garlic.
🍅 Bake in the oven uncovered for 35 minutes or until tomatoes have burst.
🍅 Meanwhile, cook the pasta, reserving some pasta water to thin sauce if needed.
🍅 Blend the tomatoes and ricotta in a blender until smooth and transfer to a large pot.
🍅 Mix cooked pasta with the sauce. If needed, add pasta water to thin sauce.
🍅 Transferred to a serving bowl and top with pesto and grated Parmesan.
🍅Enjoy!

🍎 vegan
🍎 no sugar added
🍎 easy to make
🍎 simple ingredients

Makes 2-3 servings
100 grams oats (approximately 3/4 cups)
Two medium apples, grated
1 tablespoon flax seeds
1 tablespoon Chia seeds
30 ml coconut oil
1 teaspoon cinnamon
1/4 teaspoon ginger powder
Pinch of salt

🍎 preheat oven to 350°F
🍎 grate apples, and transfer to a mixing bowl
🍎 add remaining ingredients and mix well
🍎 transfer ingredients to a parchment lined baking sheet and spread into an even layer
🍎 bake for 40 minutes checking and mixing every 10
🍎 once the granola is done turn off the oven and leave to cool with the door of the oven slightly open
🍎 store in an airtight container and enjoy!

Boost your immunity, soothe a sore throat and stay healthy!

🍯 1 large organic lemon, washed well. (use organic if possible as you will be using the whole lemon.)
🍯 4 tablespoons grated fresh ginger
🍯 1 cup raw unfiltered honey

🍯 quarter a lemon and place in a high-speed blender with honey and ginger
🍯 blend until fully combined
🍯 pour syrup into an airtight glass container, and store in the fridge
🍯 when ready to use fill a mug with boiling water and add a tablespoon of syrup. Stir to combined and enjoy.

Butternut Squash Soup 🥣

Looking for an easy dinner that your family will love? This soup is so simple to make and is super nutritious and delicious.

2 1/2 cups butternut squash, peeled and diced
2 onions, peeled and quartered
1 large apple, quartered
1 clove garlic, full bulb cut in half
8 sprigs fresh thyme
Olive oil, to coat vegetables
Salt & pepper
2-3 cups vegetable broth (depending on how thick or thin you would like your soup)

Preheat oven to 425°F
Place all vegetables on a baking sheet.
Coat with a generous amount of olive oil and salt and pepper.
Top with fresh thyme
Bake for 30-40 minutes or until butternut squash is tender.
Transfer vegetables to a pot and add 2 cups vegetable stock.
Using a hand blender mix until smooth.
Add additional stock if you would like your soup slightly thinner.
Serve hot and enjoy!

* you can also use a blender to blend soup if you do not have a hand mixer *

These muffins are a healthy and delicious snack. Perfect for breakfast or to pack in your lunch. My family really enjoyed them and they were eaten up by the end of the weekend!
Note to self - make a double batch next time!

Makes 9 muffins
1 lg carrot, peeled and grated
1 lg Fuji apple, peeled and grated (I used gala)
2 eggs, lightly beaten
1/3 cup coconut milk
3 tablespoons maple syrup
1 teaspoon freshly grated ginger
1/2 cup almond meal (I used almond flour)
3/4 cup brown rice flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 teaspoon salt

Preheat oven to 375°F
Mix wet ingredients in a large bowl
Whisk all dry ingredients in a separate bowl and slowly mix in too wet ingredients.
Fill a greased or lined muffin tin 3/4 of the way full with batter.
Bake for 20 to 25 minutes
