Apple Turnovers

Jessica Y
These apple turnovers have a delicious filling baked inside a buttery puff pastry. I like to drizzle them with caramel sauce and a scoop of vanilla ice cream.

  • 1 sheet puff pastry thawed
  • 4 apples diced
  • 3 tbsp butter
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract or paste
  • 1/2 lemon juiced
  • pinch salt
  • 1 egg whisked

Instructions

  • Preheat Oven to 400F.
  • Line a baking tray with parchment paper and placed thawed puff pastry on top.
  • In a large pan add butter and melt.
  • Add apples, brown sugar, cinnamon and a pinch of salt and cook until apples are just soft.
  • Stir in lemon juice and vanilla extract.
  • Take the pan off the heat and set aside to cook.
  • Once the puff pastry has thawed, cut into six squares.
  • Place a heaping spoonful of the apple mixture into one corner of the pantry square.
  • Fold the pastry over and pinch the edges with your finger or fork.
  • Cut small holes in the pastry to let the steam escape.
  • Whisk the egg into a small bowl and brush the tops of the pastry.
  • Bake at 400F for 20-25 minutes until the pastry is cooked through and golden brown.

Notes

Made the turnovers even more decadent by drizzling with caramel sauce and topping with vanilla ice cream.
