Apple Turnovers

These apple turnovers have a delicious filling baked inside a buttery puff pastry. I like to drizzle them with caramel sauce and a scoop of vanilla ice cream.

puff pastry
thawed

apples
diced

brown sugar
1/2
tsp
cinnamon
1
tsp
vanilla extract or paste
1/2
lemon
juiced
pinch
salt

egg
whisked
Instructions
Preheat Oven to 400F.
Line a baking tray with parchment paper and placed thawed puff pastry on top.
In a large pan add butter and melt.
Add apples, brown sugar, cinnamon and a pinch of salt and cook until apples are just soft.
Stir in lemon juice and vanilla extract.
Take the pan off the heat and set aside to cook.
Once the puff pastry has thawed, cut into six squares.
Place a heaping spoonful of the apple mixture into one corner of the pantry square.
Fold the pastry over and pinch the edges with your finger or fork.
Cut small holes in the pastry to let the steam escape.
Whisk the egg into a small bowl and brush the tops of the pastry.
Bake at 400F for 20-25 minutes until the pastry is cooked through and golden brown.
Notes
Made the turnovers even more decadent by drizzling with caramel sauce and topping with vanilla ice cream.
