Chicken Pot Pie Casserole

Ingredients

carrots, chopped

cup
white onion, chopped

celery, chopped

cooked chicken breast, cubed or shredded
1/2
tsp
oregano, dried
1/2
tsp
poultry seasoning
1/2
tsp
salt
1/4
tsp
pepper
1/2
tbsp
garlic, minced
4
tbsp
all purpose flour
3
cups
chicken broth
use more or less depending on the consistency you like
Instructions
Preheat oven to 375 degrees Fahrenheit.
In a large pot add olive oil and warm slightly.
To the olive oil add carrots, onions, celery and garlic and cook until soft.
Add poultry seasoning, oregano, salt and pepper and stir to combine.
Add flour and cook until slightly browned and there is no longer a flour smell.
Slowly add chicken stock, stirring until you reach a consistency that you like.
Transfer to a 9x9 baking dish and bake for 30-40 minutes or until bubbling around the edges.
