Chicken Pot Pie Casserole

Ingredients
  

  • 1 cup carrots, chopped
  • 1 cup white onion, chopped
  • 1 cup celery, chopped
  • 2-3 cups cooked chicken breast, cubed or shredded
  • 1/2 tsp oregano, dried
  • 1/2 tsp poultry seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tbsp garlic, minced
  • 4 tbsp all purpose flour
  • 3 cups chicken broth use more or less depending on the consistency you like

Instructions
 

  • Preheat oven to 375 degrees Fahrenheit.
  • In a large pot add olive oil and warm slightly.
  • To the olive oil add carrots, onions, celery and garlic and cook until soft.
  • Add poultry seasoning, oregano, salt and pepper and stir to combine.
  • Add flour and cook until slightly browned and there is no longer a flour smell.
  • Slowly add chicken stock, stirring until you reach a consistency that you like.
  • Transfer to a 9x9 baking dish and bake for 30-40 minutes or until bubbling around the edges.
