Sweet Potato & Black Bean Chili

Easy sweet potato and black bean chilli

Equipment

  • 1 crockpot optional - can be made on the stove as well

Ingredients
  

  • 2 tbsp olive oil
  • 1 yellow onion, diced
  • 2 sweet potatoes, peeled and diced
  • 2 cans black beans, rinsed and drained
  • 1 26 oz crushed tomatoes
  • 1 12 oz can tomato sauce
  • 1 package chili seasoning of your choice
  • 3 cloves garlic, minced
  • 2 tsp sugar (optional)

Instructions
 

  • In a large pot heat olive oil
  • Add onion and garlic and cook until onions are translucent
  • Add sweet potato, black beans, crushed tomatoes, tomato sauce, chili seasoning & sugar (optional).
  • Mix and simmer for a minimum of 2 hours (or until sweet potatoes are tender)

Notes

  • Slow cooker - add all the ingredients into the slow cooker.  Cook on low for 4 hours.
